Spiced Negroni Gin is made specifically for the Negroni, to cut through Campari and vermouth. It is a highly aromatic, rich and spicy gin with great power and intensity. Four Pillars use spices like Tasmanian pepperberry leaf, cinnamon, West African spice Grains of Paradise and Indonesian cubeb to up the flavour. Plus they add fresh ginger to the botanical basket to help lift the spice, and they opened up the plates in the still to add weight and intensity.

Sherry Cask Gin is rich and layered with fruit and nut flavours. The Sherry cask solera is made up of 42 casks, some from Spain and some from Australian Apera (fortified wine). The colour has deepened as the casks age and residual sherry characters are underpinned by pine oil notes. The gin finishes with a subtle sweetness from the tweak of Amontillado Sherry we add at bottling.

It's spicy but with great citrus, a truly modern Australian gin. Four Pillars Rare Dry Gin captures the essence of contemporary Australia's heritage in Europe and Asia. We're using whole oranges which is unusual but Australian citrus is highly aromatic and supports the spicier botanicals like cardamom. The cinnamon and star anise add rich fruitcake tones, the Tasmanian pepperberry leaf provides warmth rather than heat, and the lemon myrtle is a beautiful alternative to lemon peel.

The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. Four Pillars have used olive leaf and oil from the Picual, Hojiblanca and Coratina varieties. Similar in style to the Rare Dry Gin but with the addition of three fresh botanicals: turmeric to add weight and earthiness, ginger for spice and zesty native finger limes.

A new and permanent member of the Four Pillars family, Fresh Yuzu Gin offers amazing aromatics that are a mix of lemon, mandarin, cumquat and grapefruit. The palate also features ginger, turmeric and sencha genmaicha, a Japanese green tea with roasted brown rice, for depth of flavour.

In 2015 Four Pillars combined their Rare Dry Gin with some of the best Shiraz grapes in Australia to create the Bloody Shiraz Gin for the first time. And now each year they steep Yarra Valley Shiraz grapes in gin, and after eight weeks they press the fruit before blending with more Rare Dry Gin.

Fords Gin is a collaboration between 8th generation Master Distiller Charles Maxwell of Thames Distillers and Simon Ford of The 86 Company. A modern take on a classic London Dry Gin, Fords starts with a traditional base of juniper and coriander seed and is balanced by citrus, florals and spices that are steeped for 15 hours before being distilled. Each botanical blends together to create the perfect, versatile base for any gin-inspired cocktail.

It is with great pride that Asahikawa distillery made this unique gin on the Northern island of Hokkaido in Japan. The main botanicals - green bitter orange peel, coriander, licorice and angelica root - macerate for more than 24h in neutral cane spirit distilled thanks to a copper still with a swan neck to 83% vol. It is then diluted down to 43% vol with water sourced from the Taisetsu Mountains and filtered through charcoal for optimal purity.

Micro-distilled in small batch copper-pot stills, Empress 1908 is hand-crafted using eight signature botanicals: tea, juniper, rose, coriander seed, grapefruit peel, ginger root, cinnamon bark, and butterfly pea blossom. It's the pea blossom, which we discovered in one of the Empress tea blends, that imbues the gin with a distinctive earthy note. The distinct flavour and colour of Empress 1908 comes from the infusion of tea botanicals. No artificial colours or stabilisers are used in its creation - so while the flavour will last forever, its unique indigo hue will not. Fading of the natural colour is accelerated by exposure to sunlight. We recommend that you experience each bottle within a year of purchase and store in a cool, dark place. The latest release from The Shed Distillery: an Irish gin with an exotic twist! This gin is distilled with more than 12 oriental botanicals, gunpowder tea, and a hint of Sardinian citrus - one of the rarest citrus fruits in the world found only on the island of Sardinia. The mix of botanicals and gunpowder tea gives this gin a uniquely fragrant, almost exotic aroma. Flavours are a delightful meld of orange and grapefruit, which leads to a mysterious finish. In deepest rural Ireland, on the edge of a lake in Drumshanbo, Co Leitrim, is home of The Shed Distillery and PJ Rigney.
