The latest release from The Shed Distillery: an Irish gin with an exotic twist! This gin is distilled with more than 12 oriental botanicals, gunpowder tea, and a hint of Sardinian citrus - one of the rarest citrus fruits in the world found only on the island of Sardinia. The mix of botanicals and gunpowder tea gives this gin a uniquely fragrant, almost exotic aroma. Flavours are a delightful meld of orange and grapefruit, which leads to a mysterious finish. Best enjoyed in a smooth, refreshing cocktail or on its own with a generous wedge of fresh red grapefruit.

Micro-distilled in small batch copper-pot stills, Empress 1908 is hand-crafted using eight signature botanicals: tea, juniper, rose, coriander seed, grapefruit peel, ginger root, cinnamon bark, and butterfly pea blossom. It's the pea blossom, which we discovered in one of the Empress tea blends, that imbues the gin with a distinctive earthy note. The distinct flavour and colour of Empress 1908 comes from the infusion of tea botanicals. No artificial colours or stabilisers are used in its creation - so while the flavour will last forever, its unique indigo hue will not. Fading of the natural colour is accelerated by exposure to sunlight. We recommend that you experience each bottle within a year of purchase and store in a cool, dark place. Named for the Hector's dolphins that swim off Akaroa, Hector's Gin comes in flavour profiles foraged from Banks Peninsula. Pinot Noir from vines in French Peak Vineyard, syrah, kelp, thyme, lavender and lemon myrtle gathered by local foragers are blended with classic botanicals to create a vibrant yet velvety smooth ruby red gin with notes of a fruit forward pinot noir. Bright, silky and elegant with a dash of spice. The addition of Waiheke Island Syrah adds a tannic structure to the gin while maintaining a slight sweetness on the front palate.

Blind Tiger Organic Gin is an exotic blend of juniper berries, coriander, angelica root and summer savoury. Juniper Berry is the core botanical of many Gins and in Blind Tiger provides a backbone of fresh spring forest and citrus notes. Coriander has been selected as it enhances the citrus characters of the juniper and imparts a subtle earthy character whilst the angelica root gives a delightfully aromatic and heady note of musk. Summer savoury completes the botanical mix and contributes a subtle mint like peppery character. The combination of these herbs creates a London Dry Gin that is a perfect mixer with Tonic or Soda and a great base for one of the hugely popular gin based cocktails.

First, we distil our award-winning London Dry Gin on our copper stills. Then we leave it to rest on wild sloe berries, picked in the autumn. The result is a truly handmade sloe gin that is subtle, complex and bursting with flavour.

In 2015 Four Pillars combined their Rare Dry Gin with some of the best Shiraz grapes in Australia to create the Bloody Shiraz Gin for the first time. And now each year they steep Yarra Valley Shiraz grapes in gin, and after eight weeks they press the fruit before blending with more Rare Dry Gin.
