The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot. Four Pillars have used olive leaf and oil from the Picual, Hojiblanca and Coratina varieties. Sherry Cask Gin is rich and layered with fruit and nut flavours. The Sherry cask solera is made up of 42 casks, some from Spain and some from Australian Apera (fortified wine). The colour has deepened as the casks age and residual sherry characters are underpinned by pine oil notes. The gin finishes with a subtle sweetness from the tweak of Amontillado Sherry we add at bottling.

Spiced Negroni Gin is made specifically for the Negroni, to cut through Campari and vermouth. It is a highly aromatic, rich and spicy gin with great power and intensity. Four Pillars use spices like Tasmanian pepperberry leaf, cinnamon, West African spice Grains of Paradise and Indonesian cubeb to up the flavour. Plus they add fresh ginger to the botanical basket to help lift the spice, and they opened up the plates in the still to add weight and intensity.

Frangelico tantalises the senses with a rich hazelnut flavour that comes from the tonda gentile hazelnuts of Southern Piedmont. They are bigger, plumper and more uniform. Perfect for toasting and without a bitter taste, giving Frangelico its surprising golden sweetness.

This Saffron Gin comes from a recipe rediscovered in the Boudier archives. Saffron Gin is the result of an alliance between Great Britain for its London Dry Gin, India for its spice used extensively in cooking and in religious ceremonies, and French know-how developed by Gabriel Boudier. This original product with exotic notes is manufactured entirely at Dijon and is used in numerous cocktails, the most famous being Saffron gin and tonic.

Galliano Amaretto is a rich and especially well-balanced. The bitter almond flavour is obtained by mixing the pure essence of bitter almonds with essential oils of geranium, rose and orris. Besides the familiar marzipan and bitter almond flavour, it contains hints of roasted cacao beans and Madagascar vanilla. The subtle note of sweet and sour cherries comes from the flesh and stones of the fruit. The distillate is left to age for a few weeks to develop the sweet, caramel and bitter aromas, which results in the unique feature of Galliano Amaretto.

Galliano Sambuca Black is a deep 'Liquore alla Sambuca'. The delicate liqueur gets its colour from blending the original recipe with elderberries, turning the Sambuca liqueur a deep blue almost inky black shade. Quite unusual. The signature aniseed aroma and lingering essential oils, are accompanied by an intense and spicy berry finish. A delicate charmer.

Galliano Ristretto is not like any coffee liqueur, but is a unique espresso liqueur with a more concentrated palate. Containing two varieties of dark roasted coffee beans: 55% Arabica coffee beans from Colombia and Brazil and 45% Robusta coffee beans from India and Kenya.
